Regional cuisine

Provencal cuisine is considered to be one of the healthiest in the world. The dishes of the Côte d’Azur are characterized by lightness and low-calorie. The ingredients contained in it are very valuable and aromatic. There are seafood, fragrant herbs, various types of meats and large quantities of vegetables and fruits.

NICOISE SALAD

Nicoise Salad – It is easy to digest and at the same time very filling. It consists of ingredients such as:

– romaine lettuce, which is extremely valuable. It contains large amounts of carotene, which has a beneficial effect on the functioning of vision and the immune system. It is also a valuable source of vitamins: B1, B2, PP and C. Lettuce is also rich in calcium, phosphorus, potassium, magnesium and iron.

– hard boiled eggs rich in protein, low in total fat and several important nutrients such as selenium and vitamins: B12, B2. They also contain omega-3 acids. They reduce weakness and fragility of bones, heart disease, improve vision, accelerate metabolism, neutralize the harmful effects of choresterol.

tuna, which is a good source of omega-3 acids. It’s low in calories, high in protein. Contains vitamins: D, B1, B3, B6. Protects against atherosclerosis, formation of blood clots, lowers cholesterol and pressure, supports brain and muscle function.

-onion, which is a source of many vitamins and minerals, and at the same time is low in calories. One average onion has only 44 kcal. This vegetable is particularly rich in vitamin C, a nutrient involved in the immune system, collagen production, tissue repair and iron absorption. Onions are also rich in vitamins: B, B6, B9 — which play a key role in the metabolism and production of red blood cells. It also contains ingredients such as potassium, calcium, iron, magnesium, phosphorus, sulfur.

– olives, are a rich source of B vitamins – very important for the proper functioning of the nervous system and the preservation of the normal condition of the skin. They also contain large amounts of vitamins:  A, C, E. Olives are a source of numerous trace elements such as phosphorus, copper, iron and potassium. They are low in calories and support digestion.

– also contains dijon mustard, olive oil, lemon juice, wine vinegar, pepper, salt.

BOUILLABAISSE SOUP

Bouillabaisse soup-is a combination of exclusive French ingredients. For its preparation the most important will be:

SOCCA

Socca -is a thin, slightly crispy chickpea flour pie. You can eat with your favorite pastes or just as a snack to crunch. 

Chickpea is a naturally gluten-free plant. A variety of dishes made from seeds and flour made from chickpeas are a rich source of protein, fiber that helps to keep normal body weight. Some chemical substances reduce the likelihood of cancer cells. Regular consumption of chickpeas reduces the risk of diabetes, atherosclerosis, heart attack and other diseases of the blood system. 

Socca consists of ingredients such as:

– chickpea flour and water

 – Olive oil which is rich in vitamins A, E, D and K. It helps with atherosclerosis, gallstones, death and stomach ulcers, constipation. Perfectly cleanses and regulates digestion processes. 

– Your additives: Depending on your preferences, you can choose any ingredients such as: aromatic herbs, tomatoes, Parmesan cheese, Parma ham

Typically Provençal dish: petits farcis – stuffed vegetables. This meal may be slightly different in every home because there are small changes products such as rice or parmesan. Usually eaten for dinner, a dish consisting mainly of vegetables and meat such as: tomato, zucchini, eggplant, paprika, onion, beef, pork or veal, basil, parsley and thyme, as well as some olive oil. These ingredients are rich in many nutritional values that have a good effect on health. The dish contains of ingredients such as:

– tomatoes have a lot of vitamins B: they have a beneficial effect on the nervous system, and vitamin PP.  a positive effect on the metabolism and cholesterol in the blood, as well as vitamin K, which has anticoagulant properties, it is also a richness of minerals

 – zucchini – is a low-calorie product, it is classified as a vegetable that does not accumulate heavy metals and nitrates, in its pulp can be found potassium, magnesium, iron and vitamins of group A, C and K – eggplant – contains potassium, copper, magnesium, vitamins C, K and B and provides the body with dietary fiber, phytosterols and antioxidants 

– paprika – is a good source of antioxidants, also contains vitamins C, A, E and B – onion – has healing properties, is a source of sulfur, zinc, megnez, fluorine, folic acid, iron, potassium and silicon and vitamins of group B, C, K, E A fiber 

– beef – contains more absorbable iron than other types of meat and vitamins of groups A, E, D and B 

– pork – source of protein and amino acids – celecine – source of vitamins of group B and iron and phosphorus

 – basil – has a good effect on digestive and nervous system, improves digestion, reduces flatulence and stimulates the heart, etc

. – parsley – contains vitamin C and folates and beta-carotene, refreshes breathing, prevents anemia and positively affects the condition of the epidermis and the eye organ

 – thyme – has antioxidant, antiseptic and anti-inflammatory properties, is useful in strengthening the immune system, among other things due to the high content of vitamins, iron and minerals and can fight anemia.

RATATOUILLE

Ratatouille – a dish from Nice. Dish is based on vegetable ingredients, primarily: eggplants, zucchini, onions, tomatoes and peppers. 

– Eggplant: It is a good source of fiber, supports the digestion of fatty meats. It has properties improving metabolism, detoxifying, lowering blood pressure and cholesterol. 

– Yellow, Green Zucchini: Contains potassium, iron and magnesium as well as vitamins: C, K, PP, B1 and  beta carotene. The advantage of zucchini is that it does not deposit heavy metals. In addition, the vegetable positively affects the digestion process.

– Roman tomatoes: One of the most important ingredients is potassium, which thanks to its diuretic effect lowers blood pressure

Red and yellow peppers: it is a good source of vitamins C and E. It also contains large amounts of folic acid. This is good information for future mothers, as it prevents malformations of the fetus and takes care of the development of the baby’s nervous system. 

– Onion: It is now known that the healing properties of onions are associated with the content of many beneficial ingredients, including antioxidants and sulfur compounds. Thanks to them, the vegetable has, among others, antibacterial, cholesterol-lowering and anti-cancer effects 

– Garlic: Garlic included in the diet perfectly strengthens immunity and helps in the fight against colds and flu. Important here is the vitamin C contained in it, which is responsible for the proper functioning of the immune system. Research studies have also shown its effect on lowering cholesterol.
